CHICKEN SHAWARMA MEAL
This one's a whole meal combo, and quite frankly I eat this just about every day for either lunch or dinner. The Chicken shawarma is from New York Times Cooking. You may need to create an account to see it, but it should be free (it was for me?). The Jasmine rice is from Budget Bytes. These both are incredibly easy. Mix it with some hummus and pita, and you've got a perfect meal!
PIMENTO ITALIAN SANDWICH
I made this sandwich for Mousetrap and Bluegrass Baking Co's Grab and go competition and I'm SO happy with how it ended up. This is a meat lover's dream with toasty melted cheese on an AMAZING baguette. Love it.
EASY CAPRESE CALZONE
I'm absolutely obsessed with these super easy calzones. They take minimal time, minimal effort, and come out with maximum flavor!
SALMON, SPINACH, AND POTATO BAKE
This stuff is the PERFECT cold and rainy day meal. It's so think and creamy. The potato pieces fit perfectly in to provide substance and the salmon really gives the dish its flavor. This is definitely my new fav winter dish.

Italian-Seasoned Pepperoni Poppers
These pepperoni poppers are definitely one of my new favorite apps. But I think the best thing is how customizable they are! You don’t have to stick to pepperoni, or even salami, like I did. Next, I plan to try Caprese fillings - add whatever sounds good to you!
Sweets
VEGAN & GF HEALTHY APPLE CRISP
This is one of my favorite go-to recipes. Apple and oats just always go so well together, and throwing ice cream on top of this? It really can't get much better than that. I love how depending on how you make it, you can make it vegan, gluten-free, or completely normal, whatever you want! And it's super easy with the options for both are on the recipe post.
PILLSBURY APPLE PIE PULL-APART BREAD
LOVED this apple bread! I have an obsession with apple recipes if you can't tell. I got this one from Pillsbury (because they email me recipes like daily and I just can't ever not spend an hour on their website after that). I added some icing on top and it was a HIT at a potluck I went to!

APPLE PIE CUPS
These are not only the perfect dessert, but they're also the easiest dessert I've ever made. It doesn't get easier than combining 2 ingredients and throwing them in the oven. And it definitely doesn't get any better than cinnamon rolls & apple pies.
VEGAN CHEWY SNICKERDOODLES
These cookies may be the most addictive recipe I've every tried. I literally cannot get myself to stop eating them most days, and what's even better is they're vegan!
CHICKPEA BUCKEYES
While the recipe for these buckeyes is Halloween themed, you can still use this recipe to make normal buckeyes. I'm a huge fan of this recipe because it's healthi(er) with the chickpea addition and honey as the added sweetner! And if you're going for a little bit sweeter (I'm a sweets addict sorry), I doubled the vanilla and added 2 tbsp of sugar for a buckeye that literally tasted the exact same as a sugar laden one!
VEGAN S'MORES COOKIES
I tried these out for a bake sale and I'm obsessed now. Even all my non-vegan friends were LOVING them. I personally use a little less chocolate chips and a little more marshmallows, but either way these things are an absolute hit!
BUZZFEED'S S'MORES FRENCH TOAST
I'm not lying when I say I'm a french toast addict and this was one of the best breakfast plates I've ever had. But I'm also not lying when I say it was the most rich, sweet breakfast I'd had in a while. I mean, it sounds like a list of pro's to me.
Single Serve Vegan Cookies
These are not only insanely good but SO easy and I love being able to make a small amount for just one evening rather than turning it into a whole baking episode! Also VEGAN!
Custard Fruit Tart
I’m a huge fan of fruit pizzas so decided to give this one a try and it was great! The custard from this recipe is so good that I plan to make it again just to eat on its own. And the Ritz crust gives it a perfect salty-sweet balance.
